Tender Whole chicken in a slow cooker Tanya's way

Tender Whole Chicken


Ingredients:
3-4 lbs roasting or frying chicken
1 large onion chopped in large pieces (about 2 finger thick)
1 small lemon quartered
4 carrots, scrubbed, peeled, chopped in thirds
4 gloves of peeled and smashed garlic

Rub ingredients:
4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp Mrs Dash original
3 tsp McCormick Montreal chicken
2 tsp chicken vegeta

Directions:

Remove chicken from packaging and remove neck and organs. Soak chicken in cold water about 30 minutes. Then pat dry with paper towel.

In a bowl mix all the rub ingredients. If you don't have any of these spices, you can substitute with the ones you like or have.

Add the rub to the outside and inside of the chicken. Set aside.

Cut all vegetables. Make sure they all the same size. I like to cut my carrots about in 4-5 pieces.
Place quartered lemon, few carrot pieces, some onion and garlic inside the chicken.

Fry the rest of the veggies on medium high (7) in olive oil until they start turning gold. Vegetables don't have to be ready.
(If you don't have time, you can skip this step, but frying veggies a little bit before placing in slow cooker makes them taste much better. Especially onion)

Put vegetables in the slow cooker first before laying the chicken on top. Cover lid and cook on low for 6-8 hours until internal temperature shows 160 degrees F.

Remove chicken and place in a baking dish. Place baking dish in the oven under the broiler for about 5 minutes. Allow chicken to rest after removing it from the broiler for 5-10 minutes.
