Slow Cooker Chicken Marinara

Ingredients:
1/3 cup Italian Seasoned Bread crumbs
2 tsp McCormick Montreal chicken spice
3 tbs flour
2 boneless chicken breasts
1 egg
1 cup Marinara Sauce (I like Trader Joes one) if you don't have it you can use any Tomato Sauce or Italian Sauce
1/4 cup shredded mozzarella cheese

Directions:

1. Fry the bread crumbs on medium in a sauce pan without oil until golden brown, stirring every minute.

2. Combine the flour, spices and chicken in a large Ziploc bag and seal shut. Shake until the chicken are coated with the flour.

3. In a shallow bowl, lightly beat the egg. Place bread crumbs on a separate plate. Dip floured chicken in the egg, coating all sides then press it into the bread crumbs. Place coated chicken in a slow cooker.

4. Spread marinara sauce over the top of the chicken.

5. Cook for 5-6 hours on low. About 20 minutes before the cooking is finished add cheese on top of the chicken.

We ate this delicious chicken with brown rice pasta mixed with fried mushrooms, onions and marinara sauce. And healthy spinach, broccoli salad with flaxseeds.

Tender Whole chicken in a slow cooker Tanya's way

Tender Whole Chicken

Ingredients:
3-4 lbs roasting or frying chicken
1 large onion chopped in large pieces (about 2 finger thick)
1 small lemon quartered
4 carrots, scrubbed, peeled, chopped in thirds
4 gloves of peeled and smashed garlic

Rub ingredients:
4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp Mrs Dash original
3 tsp McCormick Montreal chicken
2 tsp chicken vegeta

Directions:

Remove chicken from packaging and remove neck and organs. Soak chicken in cold water about 30 minutes. Then pat dry with paper towel.

In a bowl mix all the rub ingredients. If you don't have any of these spices, you can substitute with the ones you like or have.

Add the rub to the outside and inside of the chicken. Set aside.

Cut all vegetables. Make sure they all the same size. I like to cut my carrots about in 4-5 pieces.
Place quartered lemon, few carrot pieces, some onion and garlic inside the chicken.

Fry the rest of the veggies on medium high (7) in olive oil until they start turning gold. Vegetables don't have to be ready.
(If you don't have time, you can skip this step, but frying veggies a little bit before placing in slow cooker makes them taste much better. Especially onion)

Put vegetables in the slow cooker first before laying the chicken on top. Cover lid and cook on low for 6-8 hours until internal temperature shows 160 degrees F.

Remove chicken and place in a baking dish. Place baking dish in the oven under the broiler for about 5 minutes. Allow chicken to rest after removing it from the broiler for 5-10 minutes.

Serving 2 (its usually enough for my husband and I and our 2 kids)
For this recipe I use the two chicken legs and 2 wings. (When I cut my chicken I usually leave a little more meat for the wings). You can use any parts of the chicken you like with these sauce ingredients.

Ingredients:
2 Chicken legs and 2 wings. (You can use 6 drumsticks or 8 wings)

Sauce:
1 tbsp soy sauce
1 tbsp maple syrup (or honey)
1 small squeesed fresh lemon
1 tsp olive oil
1 tsp Mrs Dash original
2 tsp chicken vegeta
2 tsp McCormick montreal chicken

You can add any vegetables you like. I usually add carrots, onions, quartered mushroom, green peas. You can also add celery, broccoli, potato or any other vegetables you have. I like to fry my veggies first before placing them in slow cooker.

Directions:

Mix all the sauce ingredients, coat your chicken and place it in a slow cooker. Cook on low for 6-8 hours.

Slow Cooker

Slow cooker

Not that long ago I found out about really convenient and easy to use and not that expensive tool for my kitchen. Its called Slow Cooker. I was so excited when I got it for my birthday last October and since then it became my friend that I use at least once every week. It saves so much time, the meat taste so tender and my family likes to try new dishes. I have been trying out new recipes most of them turned out really good, because I always modified them to my taste. Today I would like to share some of my favorite recipes.

I like to buy organic chicken at Trader Joe's. If I don't do the whole chicken in slow cooker, I usually cut it right away after I bring it home. I cut the wings and legs make one dish out if it, then i cut the breasts and all the bones and whats left over and make another dish that I love making "Щи" using my grandmothers recipe.
